Extra jam made with wild blackberries harvested in a controlled area on the Tuscan-Emilian Apennine, concentrated in a boiling vacuum at 60 ° -65 ° C to keep the organoleptic properties of the fruit unaltered. Produced without added pectin, the jam is sweetened with bio-cane sugar (33%) coming from a fair-solid market, or stevia (0.2%). When it is made with cane sugar the product is biologically certified by CCPB operator number AE37.
